Chemistry of neutralizing pickle

I have a crock pot full of deep turquoise colored extremely
well-used citric acid pickle. It’s time to change it.

My question, posed purely out of curiosity, is-- once I’ve
neutralized the pickle with baking soda, what chemical solution is
left?

(My last chem class was 30+ years ago–I don’t even know where to
start to try to figure this out by myself.)
